Taking a quick break from the kitchen. Emeril’s “Sunday dinner roast pork with mushroom gravy” is underway and so far, so good. We jerry-rigged a Dutch oven using mom’s 40+ year old roasting pan and I think it’s going to work out just fine. Cooks Illustrated calls this technique “moist heat cooking.” I wonder if carnitas is made this way?Anyways, gotta run to start the mushroom gravy. A happy Mothers Day to everyone!
