Naoto and I had lunch today at Santoka Ramen (山頭火 らーめん) in the Mitsuwa shopping center. Santoka serves tonkotsu-style ramen in shio, shoyu and miso flavors.We had the shio, and this was hands-down the best ramen I’ve ever had. The dashi had great, complex flavor — not just salty. And the toppings were good, cut into smaller-sized pieces so it complemented the ramen, not over-powered it.
There was even a tiny umeboshi in the middle of the ramen.
Naoto explained that Santoka was founded in Hokkaido, and is now a well-known chain in Japan. Most folks over there have to wait in a long line to eat Santoka ramen, so we’re lucky to have two locations (the other is in Costa Mesa).
